Tomato and Egg Noodles Recipe:
Ingredients:
- 200g noodles
- 2 tomatoes, diced
- 2 eggs, lightly beaten
- 1 onion, thinly sliced
- 2 cloves garlic, minced
- 2 tablespoons vegetable oil
- 1 tablespoon soy sauce
- 1 teaspoon salt
- 1/2 teaspoon sugar
- Fresh cilantro or green onions, for garnish (optional)
Instructions:
1. Cook the noodles according to the package instructions. Drain and set aside.
2. Heat the vegetable oil in a large pan or wok over medium heat. Add the minced garlic and sliced onion. Stir-fry until fragrant and the onion becomes translucent.
3. Add the diced tomatoes to the pan and cook until they start to soften and release their juices.
4. Push the tomatoes to one side of the pan and pour the beaten eggs onto the other side. Let the eggs cook for a minute or two, then scramble them gently with a spatula until they are mostly cooked.
5. Mix the scrambled eggs with the tomatoes, then add the cooked noodles to the pan. Stir well to combine.
6. Season the noodles with soy sauce, salt, and sugar. Adjust the seasoning to taste.
7. Continue stirring and cooking the noodles for a few more minutes, until everything is heated through.
8. Remove from heat and garnish with fresh cilantro or green onions, if desired.
